One of my favorite breakfasts to make is the Breakfast Burrito.
You can make them as a special treat one the weekends, as easy breakfast to make and go, or you can make these in a big bulk amount and freeze and just heat and go for busy mornings.
So versatile and very yummy.
My go to recipe is:
2 eggs scrambled,
a rash of bacon
half a potato, cubed, par boiled and then pan fried in extra virgin olive oil and seasoned with salt and pepper.
Wrap for assembly.
Cook up your eggs, bacon and potatoes, assemble your wrap and eat.
It is that simple.
To make this for more than one person just multiple the ingrediants for each extra person.
If you want to make a number of these to freeze to be eaten later all you do is wrap the completed burrito in baking paper and then alfoil then seal in individual zip lock bags.
To reheat, remove from the zip lock bag and the alfoil and place in the microwave and heat until warm through, alternately you can place in the oven at 170 degrees and heat until warm through.
You can put anything you like in these according to what your tastes are, have fun with them.
